Easy To Prepare Recipe: thai fragrant coconut rice



I just learned some easy-to-prepare recipes and I'm dying to share them with you coz 1, I want to brag about what I know and 2, they are absolutely lovely.

I don't really like cooking but I have this friend, Samira, that really likes cooking and trying out new recipes. So this is basically for her. She'll cook. I'll eat ;)

INGREDIENTS
Pepper
1 bay leaf
1 cinnamon stick
1 lemon grass stalk (bruised and halved)
1-inch piece root ginger (sliced)
2 cloves
2 small thin strips of lime rind
2 tsp of ground nutmeg
1 tsp of salt
25g creamed coconut (chopped)
1 pint of water
Basmati rice



1. Put  the ginger, cloves, lemon grass, nutmeg, cinnamon stick, bay leaf, lime rind, creamed coconut, salt and water in a large pan and allow to boil over a low heat.

2. Add the rice, stir well, then cover and simmer over a very gentle heat until the liquid has been absorbed and the rice is tender but still has a bite to it. (That is approx. 15minutes)

3.Alternatevely, bring the mixture to the boil, then cover tightly and turn off the heat. Leave for 20-25minutes before removing the lid- the rice will be perfectly cooked.

4. Remove the pan from the heat, add pepper to taste, then fluff up the rice with a fork.


Viola..dinner is served!
